Blackened Chicken |

2 large chicken breast
filets

2 Tbsp.
canola
Oil
3 Tbsp. melted butter.

Heat a cast iron skillet outdoors on a gas grill on
direct heat until smokin' hot (approximately 20 min). Do this outdoors because of
the intense smoke that results from this cooking technique. Meanwhile, cover the filets
with wax paper and pound down to 1/2 inch thick. Brush each filet with melted butter
and heavily coat with seasons. When the skillet is ready, add the oil and then the
filets. Fry four minutes per side turning only once. Serve with melted butter and
garnish with chopped parsley, chopped green onions and seasoning sprinkles.
